Several of you asked for Lily's favorite waffle recipe.....
ENJOY!!!!!
This makes about 8 waffles (6.5inches)
We make these in our Cuis*inart Classic Waffle Maker
On setting #3
2 cups all purpose flour
2 TBL sugar
1 TBL baking powder
1/2 tsp salt
1 2/3 cups reduced fat milk
1 medium banana (mashed)
6 TBL vegetable oil
2 large eggs
1/2 cup mini chocolate chips
Place ingredients (except for chocolate chips) in large mixing bowl. Use mixer until well blended and smooth.
Let batter sit for 5 minutes before using.
Preheat waffle maker on setting #3
Pour 1/2 cup batter onto center of the lower grid: spread evenly with heat proof spatula.
Sprinkle 1 TBL of chocolate chips over batter.
Allow batter to bubble for 5-10 seconds, then close cover of waffle maker.
Our waffle maker indicates when the waffle is done by a green indicator light.
These can be stored in a warm 200degree oven until ready to serve.
Top with syrup, powdered sugar, whip cream, or whatever you like.

Lily Birthday
Lily enjoyed her birthday for days.... we started celebrating on her birthday.......they had a cupcake celebration at her preschool, and then had a small family party on the weekend.
She had a great 4th birthday!
The morning of her birthday started with her favorite breakfast....
BANANA CHOCOLATE CHIP WAFFLES
She could eat these every morning!
Reading a birthday note from dad while mom makes the favorite waffles...
Ty made one too... they were so serious during the creating process.... so happy with their finished bracelets.

Moving and such
You might remember a few posts back that we are in the process of remodeling and moving.....
Remodeling the house that Jeff grew up in and moving 2+ hours to that house.
We are hoping to move the beginning of March.
With that said......things have been busy around here... as if they aren't busy enough already. Which brings me to my point.... we are usually really busy (who isn't these days) so add on the craziness of a MOVE and things get really wacky.
SO here are some tidbits.... not complaints by any means.....
I also know we aren't the only ones that are busy and running around like crazy people.
The last few months seem like a blurry whirlwind....
We are still in the process of selling our current home..... it has been on the market since July. We received a good contract on it but it is contingent on their buyer selling.
Quite a trick during this market. Saying a prayer that it all works out.
With the selling of the current home comes showings..... oh the joys of keeping a house clean and neat with the littles undoing everything I do. Bless their hearts. I will be SOOOO glad when the days of home showings are over.
We were without viruses or whatever seems to be going around all season during September, October, and November. It seemed everyone around us was sick during that time. We thought we were just doing great not catching anything.
Then December hit and we all fought colds, then again in January, and now again in February.
Back to the February virus... Ty got it first... just a fever and cough. Then Lily.... she had the same fever and cough thing. When we first met Lily I was surprised that she was always HOT.... our guide in China said, "CANTONESE BABY ALWAYS HOT." She was so right... Lily is ALWAYS warm and toasty. So when she gets a fever Jeff and I both say, "Cantonese baby always hot." This week our little Cantonese baby felt like a furnace.
If the littles being sick wasn't enough... add in that on Thursday night... Jeff (he never gets sick) went to bed not feeling well. I woke at 11pm to what sounded like a Lord of the Rings monster in our bathroom..(no Lord of the Rings.. .it was Jeff) ...... sorry if that was Too Much Info... we'll see how closely Jeff reads my posts...
Somehow I have managed to ward off whatever they have.... thinking a mask of some sort might be a good idea.
Now mind you we are moving in a month or so....seems it would be really great to have a lot packed by now.... it WOULD be great... however the reality is that only a few boxes are packed.
